FERGAna Pilaf
INGREDIENTS:
Rice Devzira - 400 g
Lamb / beef - 400 g
Vegetable oil - 80-100 ml
Onions - 120 g
Carrots - 400 g
Zira - 1 sachet
Garlic - 1-2 heads

Hot red pepper whole - 1 pc.
Salt to taste

1. Rinse the rice thoroughly and soak in warm water.

2. Cut the meat into pieces of about 3x3 cm, the onion into half rings, and the carrots into strips.

3. Prepare zirvak: in a heated cauldron or saucepan, fry the onion in oil until golden brown. Add meat and sauté until tender. Then add the carrots and simmer for 10 to 15 minutes. Pour in the cumin, stir and pour boiling water so that everything is covered with water by 1.5 cm.Leave it to boil for 40 minutes. Season with salt to taste.

4. Drain the water in which the rice was soaked, and gently dip it into the zirvak, level and tamp. Pour in boiling water without damaging the rice layer, which should be covered with water 1 cm. Dip the head of garlic and pepper.

5. After boiling, cook over low heat until all the water is absorbed. Remove the garlic and pepper, stir the pilaf, shaking the rice."
